So what are your favorite games that let you play as someone evil? And who's your favorite villain of all time?

Gotta go with Amon! ;D Doesn't get much more evil than a sadistic, darkness-worshipping vampire trying to "save" the world by killing/impersonating a king so he can then rule it and cover it in darkness.

The main villain from Book 1 returns! Unfortunately he's lost all his evil sorceror abilities. He's more of a surly bastard than anything else (the game rewards you for tormenting others and he insults nearly everyone he encounters- the game functions mainly as a comedy and doesn't take itself too seriously, so he's never super-evil).

Pretty much any RPG (excluding most jRPGs) - Fable, Might&Magic, Arcanum, Mass Effect, Planescape:Torment, Fallout, Jedi Academy etc.

I don't really enjoy playing "evil" characters. Never could really get into that style of gameplay. The one exception was Quintarus, my Sith Inquisitor in TOR. The way I played him he made Vader look like freakin' Gandhi. :o

Vampire the Masquerade is also great... it's the kind of game I'd recommend playing as evil the first time through since vampirism and evil tend to mix really well.
Arcanum is also great... certainly didn't expect the hero to have the option of joining the villains near the end of the game by massacring a small village to "prove his loyalty." (playing through evil at least once is necessary as there is one super-evil character you'll never be able to find out about and put a stop to in the good guy quest unless you know enough about him to thoroughly investigate him)

Neverwinter Nights 2 has a great storyline whether you choose to be good or bad, same for playing anything in the Imperial faction on SWTOR, although even when I try to play a Sith, I still end up making all the light side choices because I'm rubbish at being mean. I tried to make an evil character in Fable once and failed at the first hurdle because I couldn't deal with making the wee girl cry, and had to give her her teddy back. All in all, it's a good thing there aren't too many games like that, or at least there are ones with a choice, or I wouldn't be able to play them!

TIE Fighter let you play as a pilot for the Empire against the Rebellion...
Not really evil, per se -- no real choices except following orders -- but definitely not on the "good" side of the Star Wars saga...

inFAMOUS and its sequel for the PS3 are pretty fun in general - the good/evil stuff basically comes down to choosing one of two sets of powers and then playing through the same story with inconsequential variations, but you can tell they're trying. Second Son might add some much-needed actual morality to the formula. I haven't paid much attention to the news about it, so I don't know what they're planning.

Star Wars Jedi Knight: Dark Forces II required you (as Kyle Katarn) to choose about midway through the game: follow the Light Side, or go down the path of the Dark Side. With the Dark Side, you were able to get the more violent Force powers, including Vader's Force Grip choke hold and Emperor Palpatine's Force Lightning.
As a Light Sider, you protect the powers of the Valley Of The Jedi after defeating Jerec at game's end. However, as a Dark Sider, you absorb all of the Valley's power (which Jerec wanted for himself); the final cut-scene shows you ruling the galaxy as Emperor Katarn, with Sariss -- the last of Jerec's Dark Jedi -- faithfully at your side...

Say, what's that one Might and Magic game that lets you play as an evil king crushing a rebellion?
And I guess there's also SCMRPG which lets you literally play as the Columbine killers.
