when I am playing the game I can't seem to find out how to become a brigand or rogue

Well it's all in the choices you make in the demo. If you have already attended the execution sequence then you would have talked to some people that asked you to revisit them after. If you talk to them again they will ask you to complete a task for them.  Depending on if you accept that task or not will lock you in on taking the Brigand, Rogue, or Sorcerer path. Just go back and talk to those who you might consider a brigand or a rogue then.  Help someone different than Prospero.
